We’ve been going non-stop this summer. It’s been amazing! I took my kids to Las Vegas for a “Super Secret adventure.” They didn’t know where we were going until we got to the airport gate and they were able to read Las Vegas on the board. They kinda freaked out. It was super cool. Now I’m off to San Diego for work so it feels like we haven’t been home much. Which is completely okay with me but it’s tough when I want to cook. If I make something that my kids won’t eat, I either have to eat it for 5 days straight or I end up throwing it away. I hate that. So I haven’t been baking or cooking much.

August is here and that means it’s Secret Recipe Club reveal day. My blog assignment this month was The Wimpy Vegetarian. Susan is the author of this wonderful blog and she “shares vegetarian recipes and how to adjust them for the omnivores at the table whether you’re in a mixed marriage or cooking for a mixed family.” Susan has entered numerous cooking contests and haswon first place in Davidson’s Safest Choice Eggs recipe development contest in 2014 for herHuevos Rancheros recipe.

I really wanted to make her Bang Bang Cauliflower Mac n Cheese. It looks absolutely delicious. I am still planning on making it but I’m going to wait until it’s not 90 degrees outside and when I’m home for longer than 3 days in a row. Then I saw her Pickled Asparagus post and I really wanted to try it. I love asparagus and I love everything pickled. Great combination! And I perfect thing to take to our family beach trip coming up.

The recipe was easy and the asparagus was delicious! Thank you, Susan, for this one.

Pickled Asparagus {Secret Recipe Club}

Ingredients

  • 1 lb asparagus (1 bunch)
  • ½ cup white wine vinegar
  • ½ cup water
  • 1 tablespoon kosher salt
  • 2 garlic cloves, thinly sliced
  • 1 shallot, thinly sliced
  • 1 teaspoon whole peppercorns
  • 1 tablespoon coarsely chopped fresh dill
  • 1 teaspoon sugar
  • Pinch red pepper flakes

Instructions

  1. Wash and trim the asparagus to fit into a sterilized 16-ounce mason jar. To sterilize the jar, place in boiling water, along with the lid, for a few minutes. Arrange the asparagus in the jar pointing upwards.
  2. Bring all of the remaining ingredients to a simmer in a small pot over medium heat. Pour over the asparagus, and screw the lid on. As they cool, the lids should seal. Let them marinate in the pickling juice overnight before serving. Once the jar is opened, refrigerate for up to one month.

    Never ever had pickled asparagus, but I love pickles so much (in fact my post before today’s was about pickled red onions)

    Lucky girl, you got Susan’s blog – a true favorite of mine! I have never pickled asparagus and now I really want to! My favorite vegetable and I can think of so many things to do with them! LOVE!

    I love Susan’s blog and you’ve definitely picked a winner among winners. I just wish I’d bought asparagus when I saw them at the store earlier today. I’m totally into pickling this summer and these would be perfect on a Salade Nicoise.
