Ingredients
- 2 oz. 55 g butter
- 3 3 garlic clove, mincedgarlic cloves, minced
- ½ lb (3¼ cups) 220 g (750 ml) mushrooms, roughly chopped
- 1½ lbs 650 g boneless chicken thighs
- 1 tsp 1 tsp onion powder
- 1 tsp 1 tsp garlic powder
- 1 tsp 1 tsp dried thyme
- ½ tsp ½ tsp dried rosemary
- salt and pepper
- 2 tbsp 2 tbsp olive oil
- 1¼ cups 300 ml heavy whipping cream or crème fraîche
- 2 oz. 55 g Parmesan cheese, grated
Serving
- 5 oz. (2½ cups) 140 g (600 ml) leafy greens

Making low carb simple
Instructions
Instructions are for 4 servings. Please modify as needed.
Heat butter in a large frying pan over medium heat. Add garlic and fry until golden. Add mushrooms and fry until soft. Salt and pepper to taste. Remove the mushrooms from the pan and set aside.
Combine the spices and pat the chicken thighs with the mixture. Fry in olive oil in the same pan for 6-7 minutes on each side. It might take longer time, depending on the size of the thighs. The inner temperature should be 160°F (72°C). Remove the chicken from the pan and keep warm.
Add cream and parmesan in the same frying pan. Bring to a boil over high heat, then lower the temperature to medium high. Simmer for 5 minutes, stirring continuously, until the sauce thickens. Salt and pepper to taste.
Add the mushrooms, and then the chicken thighs back into the frying pan to warm. Serve with leafy greens, or a side dish of your choice.
Tip!
In this recipe we used boneless, skinless chicken thigh fillets, which are slightly fattier and tastier than chicken breast. You can of course also use bone-in thighs with or without skin, chicken breast, turkey, pork fillet or pork chops. Adjust the cooking time accordingly. If using chicken thighs with skin, fry until skin is crispy and inside cooked.

AHmazing...5 star deliciousness. Used boneless, skinless thighs and only half of the heavy cream to reduce the caloric intake a little. Also only needed 2 T. Butter to fry the mushrooms. Very flavourful. We enjoyed this one immensely. Thanks!

Yes. The cream may "break" or separate a little when reheating but it won't affect the taste.

Delicious! Cooked the chicken thighs on the bone in a large LeCrueset pot on the hob for about 40 mins with the lid on, then added the cooked mushrooms and only half the recommended cream as the full amount seemed a lot! I made 4 servings, so used 150ml instead of 300ml and that was perfect, sauce thickened up nicely when the cheese was added. 3.2g net carbs, 75.7g fat, 36.7g protein. It's so good we're having it 2 nights running :)

This is ridiculous stuff. So good & easy to make. Made it twice this week and with the leftovers, that means we ate it four times. My new fav recipe for sure.

I made this with skin on boneless chicken thighs, on medium high heat skin side down for 7 mins, do not turn or move sooner and the skin will be a crisp golden brown, followed the recipe exactly but used diced large field mushrooms for added texture, served it on a bed of spinach wilted in butter and it was absolutely delicious and looked stunning. Will be a regular for me. Easily 4 star not 3

I made the chicken dish with mushrooms & tomatoes tonight & it was NOWHERE as good as this recipe even though the ingredients are similar. Trust me, this recipe is so good, it’s ridiculous! A real keeper!

Had this for lunch today. Was so incredibly yummy will made again. I just chopped my mushrooms really small because I don't like them if they're large and couldn't taste them at all. Personally would not make any changes to this except maybe cut your chicken smaller theres alot of sauce and it covers the chicken better if the chicken is really small.

Yes, a lovely recipe but it makes 5 meals rather than 4. I weighed it all out once I'd cooked and tried eating one portion that was too much for me. Couldn't get through it so still have 4 portions left - three individual ones in the freezer and one for tomorrow or Saturday in the fridge. By the look of the meal, obvious carbs are very low. I didn't start doing ny arithmetic with this. Kind of spoils the meal. Even mushrooms are low in carbs. I had steamed asparagus to counteract the grease!

Haven't had a good cooking session for ages due to work shifts 🙄 but tonight, I made this recipe and served it on a bed of butter 🧈 fried cabbage 🥬 and broccoli 🥦 . Absolutely delicious if I do say so myself!! Also very filling. Typical, my eyes were too big for my belly and I could only manage one chicken thigh so will save the rest for tomorrow 😋

Fantastic one Pan Wonder!I have added this to my favourites! Like some others I put a little less crème fraîche and parmesan.
Before I added the mushrooms and Chicken at the end I added some round green beans in the creamy saucer a few minutes .
