Truth be told, when I first saw this recipe in Gooseberry Patch’s newHometown HarvestBBQ Chicken Chowdown - Recipes That Crock! (3)I was really intrigued. I knew I really enjoyed all the components of this dish…BBQ Chicken, Corn, Cornbread and Cheese (glorious cheese!)…but I wasn’t sure if I’d like them together. Well, I did! And, so did the family. Puddie said “Cris, THIS is fantastic.” I completely agree.

This isn’t just a hit with my family. Aunt Lou has tried this recipe at her home as well, and her crew loved it just as much as we do. This is such a flavorful and delicious dish that is sure to please anyone at your table. Even better, it is super easy to make. You can have an incredible and hearty dinner with very little work. It is a win, win recipe!

Now, this is the secret to cornbread in my house, but I know cornbread is a personal decision, so you are on your own on that 😉

What You Will Need for Crock Pot BBQ Chicken Chowdown

Ingredients Needed

  • 5 boneless, skinless chicken breasts
  • 24 oz BBQ sauce
  • 1.5 cups frozen corn
  • 8 oz shredded cheddar cheese
  • 10 slices bacon, cooked crispy and crumbled
  • Cornbread, prepared

Time Needed

  • Prep Time: 15 minutes
  • Cooking Time: 5 to 6 hours on low
  • Additional Cooking Time: 15 minutes on high

  • Put chicken in a 6 quart slow cooker and top with bbq sauce.

  • Cover and cook on low for 6 hours.

  • Shred chicken with two forks.

  • Add corn and cook on high for 15 minutes.

  • To serve, spoon mixture over cornbread squares, top with cheese and bacon.
